As far as I know there are no regulations on sizes, but on the loads that need to be supported by said plates and bolts. A diagram of your intended setup and some sizes could be useful.
Metal Sheet Sizes & Thicknesses Gage Architectural ProductsElevator surfaces such as doors and cab wall facings are usually specified in 18 gauge (0.050 or 1.20 mm). If the plain metal sheet is glued to a solid substrate, such as steel, heavy plywood or particle board, then 20 gauge (0.040 or 1.00 mm) Stainless Steel is sufficient.
Plugs Ear Gauges Size Conversion Chart For example, a 10 gauge wire had been pulled through 10 holes, so it was much thinner than a 1 gauge wire, which was just pulled through one. Thats why the larger the number is, the thinner and smaller the actual measurement is. The Trouble With Gauge Sizes. With body jewelry, gauges arent an exact standardized measurement.

Standard Sheet Metal Gauge Thickness ChartThis is known as the Manufacturers' Standard Gage for Sheet Steel. For other materials, such as aluminum and brass, the thicknesses will be different. Thus, a 10 gauge steel sheet which has a thickness of 0.1345 inches will weigh 41.82*0.1345 = 5.625 pounds per square foot. Examples:16 ga CRS is 2.5 pounds per square foot. For 18 ga CRS the weight is 2.0 pounds per square foot and for
